Skinny Snickerdoodles

Ingredients
  

  • 3/4 cup Gluten-Free Flour
  • 1/4 cup Coconut Sugar1
  • 1/4 cup Earth Balance Vegan Butter
  • 1/4 tsp Baking Powder
  • 1/4 tsp. + 1/8 tsp. Baking Soda
  • 1/4 tsp. Cream of Tarter
  • 1/2 tsp. Pure Vanilla Extract
  • 1 and 1/2 tbsps. Dairy-Free Milk of Choice (Almond, Cashew, Soy, etc.)
  • 1/4 tsp. Salt

Method
 

  1. Preheat oven at 330°F
  2. Combine dry ingredients in a bowl and mix well!
  3. In a separate bowl, melt butter of choice, then stir in vanilla extract and dairy-free milk of choice.
  4. Pour wet ingredients into dry and mix very well again!
  5. Roll into balls and roll the dough into an equal mix of cinnamon and sugar of choice. (Stevia, Splenda, etc.)
  6. Cook for 9-10 minutes.
  7. Note: They may look underdone when taken out of the oven, but that's okay!
