One of my all-time favorite things to do around the holidays is bake cookies! That’s why, for today’s post, I decided to pull together 5 of my favorite healthy Christmas cookie recipes that you need to try out for yourself! Each of these cookie recipes are super easy to make and taste delicious. Not to mention, they are all low-sugar, gluten-free, low calorie, and, for the most part, dairy-free!
Now that we are about half way through December, what better way to ring in the season with 5 delicious cookie recipes?! With that, let’s waste no more time and jump into these delicious recipes!
1. Gingerbread
Gingerbread cookies are a staple Christmas cookie! And this gluten-free, paleo-friendly recipe is sure to give off that same festive, spicy, yet sweet, flavor every Christmas cookie lover desires! Plus, how cute are these little guys?! It’s no wonder why gingerbread cookies are such a staple for Christmas time.
P.S: For the cream, I used regular frosting! But you could also use vegan frosting!
Healthy Gingerbread Cookies
Ingredients
- 2 cups Almond Flour
- 6 tbsps. Coconut Flour
- 1 cup Coconut Sugar
- 1 Egg White
- 4 1/2 tbsps. Molasses
- 1 tbsp. Ground Ginger
- 3/4 tsp. Ground Nutmeg
- 3/4 tsp. Ground Allspice
- 1 1/2 tsp Cinnamon
- 1 tsp. Baking Soda
- 1/4 tsp. Ground Cloves
- 1/2 tsp. Salt
Instructions
- In a large bowl, cream together the butter and coconut sugar until thoroughly mixed and crumbly.
- Add in the egg white and molasses and beat until the mixture is fluffy and lightens in color for about 1 minute.
- In a separate medium-sized bowl, stir together all of the remaining ingredients until well mixed.
- Scrape the dough onto a large piece of plastic wrap and form into a disc. Wrap tightly and freeze for 1 hour.
- Once chilled, preheat your oven to 350 degrees and line two baking sheets with parchment paper.
- Roll the gingerbread dough between two layers of parchment paper (one on the bottom, on top of your counter, and one on top of the dough, under the rolling pin) until it's about 1/4 inch thick.
- Use a gingerbread man cookie cutter to cut out cookies and (very) gently transfer to the prepared cookie sheets. If you have a small spatula, this will help a lot!
- Bake until the edges are a deep golden brown and the top appears set for about 17-19 minutes. P.S. they firm up a ton once cooled! Let cool on the cooking sheet as well! Enjoy!
2. Classic Sugar Cookie
I’m not joking when I say that I’d rather have THESE dairy-free and gluten-free sugar cookies rather than other brands of sugar cookies! They’re not too sweet, but they still have that perfectly chewy, sugary, and buttery flavor as a classic sugar cookie. I made them earlier this year and they were a hit! Therefore, I will be making them over and over again this Christmas and decorating them in many different ways!
Vegan Sugar Cookies
Ingredients
- 3 cups Almond Flour
- 1 cup Coconut Sugar
- 1 Flax Egg 1 tablespoon of ground flaxseed + 3 tablespoons of warm water, whisk together, set aside for 15 minutes.
- 1 cup room temperature Earth Balance brand Vegan Butter
- 1 tbsp. Almond Milk, Cashew Milk, Soy Milk, any other kind of nut milk or substitute water
- 1/2 tsp. Pure Vanilla Extract
- 3/4 tsp. Baking Soda
- 1/4 tsp. Sea Salt
Instructions
- Preheat oven at 375°F.
- In a medium-sized bowl, mix together all dry ingredients.
- In a separate (larger) bowl, cream together the wet ingredients.
- Add the dry ingredients to the wet ingredients and mix together.
- Using a 1.5 tablespoon cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart. These cookies will spread in the oven.
- Bake for 9-11 minutes until the edges are just slightly golden.
- Let cool completely before frosting or serving and enjoy!
3. Peanut Butter Blossoms
Peanut butter blossoms are my all-time favorite Christmas cookie!! So, of course, I just had to recreate them into something more healthy! That way I don’t feel so guilty when I eat a ton of them! 😉These cookies were also probably the easiest and quickest ones to make out of the 5 and everyone that I made them for absolutely LOVED them! Especially since they are gluten-free and vegan! What’s not to love?! Although the Hershey Kiss on top isn’t vegan, there are several ways to add that dollop of chocolate on top and still enjoy a delicious, vegan peanut butter blossom!
For example, you could add a scoop of vegan chocolate ganache instead!
Vegan Chocolate Ganache Recipe:
Ingredients:
- Vegan chocolate chips
- Coconut cream

After baking and letting the cookies cool, melt a cup of vegan chocolate chips in a double boiler or by placing them into a bowl and microwaving in 30-second increments, stirring in between.

Stir the coconut cream into the melted chips. Allow the mixture to cool down a bit, to thicken.

Spoon a dollop of ganache on top of each cookie. Allow the ganache to set at room temperature (about 1 hour), or chill in the freezer to speed up the process.
Gluten-Free Peanut Butter Blossoms
Ingredients
- 1 cup Natural, Creamy Peanut Butter
- 1
Flax Egg (1 tbsp. of ground flaxseed + 3 tablespoons of warm water, whisked together, and set aside for 15 minutes. - 1/3 cup Coconut Sugar
- 3/4 tsp. Baking Soda
- 1/4 tsp. Pure Vanilla Extract
- 1/4 tsp. Salt
Instructions
- Preheat oven to 350°F.
- In a medium bowl, add all ingredients, whish for as long as you can and then switch to folding with a spatula until thoroughly mixed.
- Roll dough into balls and space them evenly apart.
- Using a fork, press down onto each individual cookie dough to flatten them out since the cookies don't spread as much in the oven.
- Bake for 10-15 minutes & enjoy!
4. Oatmeal Chocolate Chip
Cinnamon chocolate chip oatmeal cookies this time of year always remind me of my childhood. Especially since my aunt (shout out to my aunt Sue!) always made the BEST cookies for when we would all get together around Christmas! So with that, I wanted to re-create one of my favorite childhood Christmas cookies in a new and healthier way. And I’m pretty sure I nailed it! 😜These cookies are gluten-free, dairy-free, and free of refined sugar! Plus they are incredibly delicious!!
Healthy Oatmeal Chocolate Chip Cookies
Ingredients
- 1 cup Almond Flour
- 2 tbsp. Coconut Flour
- 1/2 cup Old Fashioned Oats
- 2 tbsp. Flaxseed Meal
- 1/2 tsp. Baking Soda
- 1/2 tsp. Salt
- 1 tbsp. Cinnamon
- 1/4 cup Melted Coconut Oil
- 1 Egg
- 1/4 cup Honey or Agave
- 1 tsp. Vanilla Extract
Instructions
- Preheat oven at 350 F.
- Combine all wet ingredients in a bowl and mix well.
- In a separate bowl, combine all dry ingredients and mix well.
- Slowly add dry ingredients into wet ingredients, stirring oats in last. As well as your add-ins.
- Bake for 10-16 minutes.
5. Snickerdoodles
Snickerdoodle cookies are one of those cookies that everyone loves! And I promise that these healthified snickerdoodle cookies do NOT taste healthy at all! These snickerdoodles are so light, buttery, and sweet plus super easy and quick to make! But don’t just take my word for it, try it out for yourself and give some to your friends and family! Because trust me, they will love them!
Skinny Snickerdoodles
Ingredients
- 3/4 cup Gluten-Free Flour
- 1/4 cup Coconut Sugar1
- 1/4 cup Earth Balance Vegan Butter
- 1/4 tsp Baking Powder
- 1/4 tsp. + 1/8 tsp. Baking Soda
- 1/4 tsp. Cream of Tarter
- 1/2 tsp. Pure Vanilla Extract
- 1 and 1/2 tbsps. Dairy-Free Milk of Choice (Almond, Cashew, Soy, etc.)
- 1/4 tsp. Salt
Instructions
- Preheat oven at 330°F
- Combine dry ingredients in a bowl and mix well!
- In a separate bowl, melt butter of choice, then stir in vanilla extract and dairy-free milk of choice.
- Pour wet ingredients into dry and mix very well again!
- Roll into balls and roll the dough into an equal mix of cinnamon and sugar of choice. (Stevia, Splenda, etc.)
- Cook for 9-10 minutes.
- Note: They may look underdone when taken out of the oven, but that's okay!
