Since I’ve had to go gluten and dairy-free, I’ve been on a mission to create a healthy pumpkin spice latte that is both dairy-free and as tasty as the ones you buy at a café or at Starbucks. Although going dairy-free hasn’t been too difficult for me, I didn’t want to feel like I was missing out on all of the fall-inspired drinks this time of year since I can’t have milk. And for my fellow coffee lovers who are also dairy-free/gluten-free, I want to help you out by sharing my current favorite healthy pumpkin spice latte recipe!
This pumpkin spice latte recipe overall is dairy-free, low sugar, low calorie, vegan-friendly, and budget-friendly as well. So, not only will this recipe save you from the extra, empty calories in those sugary drinks, but it will help you save a TON of money on coffee this fall season! Win-win! I also wanted to keep this recipe short and simple, this way you can easily make it on busy mornings. Therefore, you won’t need many materials to create this healthy latte! I’ve been whipping up this drink nearly every morning before work. I love how the flavor of pumpkin is present but not too overpowering. It’s definitely sweet, but not sugary, which is something that can be hard to come by when ordering pumpkin spice lattes. This perfect fall drink will surely have you reaching for your cozy blanket and UGG boots haha!
With that, let’s get into the recipe!
My Healthy, Homemade Pumpkin Spice Latte
Ingredients:
- 1/2 cup of brewed coffee or 1 shot of espresso
- 1/2 cup of dairy-free milk of choice (I use almond or cashew)
- 2 TBSP. of pumpkin puree
- 2 TBSP. of organic maple syrup
- 1 TSP. of cinnamon
Topping Suggestions:
- Coconut or almond whipped cream
- Or check out my frozen coconut cream topping recipe for coffee or hot chocolate in this post!
- Pumpkin pie spice
Directions:
- Brew coffee or espresso
- When done, pour the coffee into a mug and whisk together the pumpkin puree, organic maple syrup, and cinnamon. Stir until well combined.
- Using a milk frother, steam the milk until foamy on top, then pour slowly into the coffee.
- Top with an extra sprinkle of pumpkin pie spice or non-dairy whipped cream.
- ENJOY!
That’s it! You now have a delicious, healthy, and dairy-free pumpkin spice latte to help wake up and get you going in the morning!
**Want to add some extra protein?!
I also want to mention, that whenever I make this recipe, I tend to add a scoop of unflavored collagen as well to easily add some extra protein! All you have to do is add a scoop of collagen to the milk before you froth it, or whisk it in with the pumpkin puree and other ingredients. I use the brand Vital Proteins and it blends/dissolves so effortlessly, to where you can’t even tell that it’s in there! Side note: Although I find this recipe does turn out better if you use an espresso machine, (since a typical latte is made with espresso and steamed milk) you truly don’t need to go all fancy for this drink if you don’t own an espresso machine. It will still turn out delicious and save you money on a weekly basis either way! But for my coffee fanatics out there, I’m sure you can tell the difference between normal brewed coffee and espresso haha!
